About the Sake Brewery

Based on the belief that "yeast never betrays," Mioya Brewery places great importance on accepting failures in the sake brewing process with sincerity. It’s not humans that make sake, but rather that yeast and microbes that play the leading role in sake brewing while humans are only there to assist. After the tour, you can shop around the store. With more than 120 Notojofu weavers at the peak of the Showa period, today Yamazaki Linen Textile Studio is the only one remaining. Established more than 130 years ago, Yamazaki is the only weaver that carries on the traditional artisanship of Notojofu. Launching its own brand "YAMAZAKI NOTOJOFU" Yamazaki aims to redefine the appeal of Notojofu through kimonos and fashion accessories. While preserving the beautiful tradition of Notojofu, Yamazaki creates items using the unique kasuri design and hand-dyeing techniques to convey the appeal of its unique kasuri pattern.
